For dinner, we decide to try River’s Edge

Pub & Grub. Due to the flooding of Lake Delton in the spring, we have to detour around washed out roads to reach the restaurant, but the extra journey is well worth it. The rustic atmosphere is exactly what we’re looking for and a huge 100 year old oak tree stands in the bar area. I decide on the BBQ ribs and Eric has his first steak of the trip.

The next morning, we head to the famous

Cheese Factory Restaurant for breakfast, which has been serving vegetarian and vegan meals to guests since 1992. Prior to opening, the building had been a cheese factory, hence the unusual name for a vegetarian restaurant. Eric’s not too excited about the vegetarian choices, so he opts for a salad and a bowl of Wisconsin beer cheese soup. I try the Lite & Lean skillet which is packed full of fresh, local vegetables. We sneak bites of each other’s dishes and agree that they are all wonderful.

Our captain explains the sandstone formations and river’s history in between 360-degree spins and fast stops that send water flowing into the boat.

We spend the afternoon exploring our resort and take a walk to the river. We choose the Market Fresh Buffet for dinner and enjoy the wide selection of entrees, including Eric’s favorite, crab legs.

Day 5

We awake early to the sounds of squirrels running across the roof of our cabin and hit the road for our drive home. We make quick stop at one last cheese shop along the way to pick up “stinky cheese” for a friend and some local wines. Our “green” journey to Wisconsin had come to an end.
